Ingredients

  • 3 ripe bananas (mashed, approximately 1.5 cups)
  • 0.5 cup vegetable oil (or melted coconut oil)
  • 0.75 cup brown sugar (packed)
  • 1 tsp vanilla extract
  • 2 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 tbsp instant coffee granules (dissolved in 1 tbsp hot water; divided use)
  • 1 cup powdered sugar (for the glaze)

    Preheat your oven to 350°F (175°C) and grease a standard 9x5 inch loaf pan, or line it with parchment paper.

    In a large mixing bowl, mash the 3 ripe bananas until smooth.

    Whisk in 1/2 cup of vegetable oil, 3/4 cup of brown sugar, and 1 teaspoon of vanilla extract until well combined.

    Sift in 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Fold the dry ingredients into the wet ingredients until just combined; do not overmix.

    Transfer approximately one-third of the batter into a separate small bowl. Stir in half of the dissolved coffee mixture (about 1.5 teaspoons of the liquid) into this smaller portion of batter until fully incorporated and dark in color.

    Spoon the plain banana batter and the coffee-infused batter alternately into the prepared loaf pan.

    Use a knife or skewer to gently swirl the two batters together to create a marbled effect.

    Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

    To make the glaze, whisk 1 cup of powdered sugar with the remaining dissolved coffee mixture until smooth and pourable. Drizzle over the cooled banana bread before slicing.

Notes

For the best flavor, use very spotty or black bananas. If the glaze is too thick, add a teaspoon of water or plant milk at a time until the desired consistency is reached.
