Ingredients

  • 1 cup all-purpose flour
  • 0.5 cup heavy cream powder (Z Natural Foods brand recommended)
  • 0.25 cup whole milk powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp coarse black pepper (use up to 2 tsp if you prefer it very peppery)
  • 1 lb breakfast sausage (for preparing the gravy)
  • 2 cup cold water (for preparing the gravy)
  • salt (to taste)

    In a medium bowl, combine 1 cup all-purpose flour, 1/2 cup heavy cream powder, 1/4 cup whole milk powder, 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1-2 teaspoons coarse black pepper.

    Whisk the dry ingredients together until very well combined and no lumps remain.

    Transfer the mixture to an airtight jar (like a pint-sized mason jar) for storage on your pantry shelf.

    To make the gravy, brown 1 pound of breakfast sausage in a skillet over medium heat until fully cooked.

    Remove the cooked sausage from the skillet, leaving approximately 2-3 tablespoons of the rendered grease in the pan.

    Stir 1/2 cup of the prepared gravy mix into the hot grease to create a roux; cook and whisk for about 30 seconds to toast the flour.

    Slowly whisk in 2 cups of cold water, stirring constantly to prevent lumps.

    Bring the mixture to a simmer and continue whisking until the gravy has thickened to your desired consistency.

Notes

The heavy cream powder is the key to making this mix creamy without needing fresh milk. One batch of the dry mix makes approximately 4-5 servings of gravy (using 1/2 cup of powder per batch).
