Ingredients

  • 5 tbsp Salted butter (2 tbsp for cooking the shallots; use the remainder to butter the bread and grease the pan)
  • 1.5 tbsp Olive oil (Source gives 1–2 tbsp; midpoint used)
  • 2 Echalion shallots (Sliced)
  • 0.25 Apple (Diced)
  • 1 tbsp Balsamic glaze
  • 3 leaves Fresh sage (Chopped)
  • Salt (One big pinch)
  • Black pepper (One big pinch)
  • 0.125 cup Red wine
  • 0.25 cup Beef stock
  • 4 slices Sourdough or white bread (Source gives sourdough or white bread)
  • 4 slices Mozzarella
  • 4 slices Extra mature cheddar
  • 1 tbsp Water (Optional; add to the pan with the lid on if needed to help melt the cheese)

Steps

  1. 1

Heat a frying pan over medium heat. Add 2 tablespoons of the butter and the olive oil.

  2. 2

Add the sliced shallots and diced apple. Sweat for about 5 minutes, until they are starting to soften.

  3. 3

Add the balsamic glaze, chopped sage, salt, black pepper, red wine, and beef stock.

  4. 4

Reduce the heat to low and cook for about 20 minutes, until the shallots are caramelised and sticky and the liquid has evaporated. Remove the pan from the heat.

  5. 5

Butter both sides of all the bread slices with the remaining butter.

  6. 6

Heat a frying pan over medium-high heat. Add about 1 teaspoon of butter to grease the pan, then place two bread slices in it.

  7. 7

Divide half of the shallot mixture between the two bread slices in the pan. Add 2 slices of mozzarella and 2 slices of cheddar to each.

  8. 8

Top each with a second buttered bread slice and cover the pan with a lid.

  9. 9

Fry for about 2 minutes, until the undersides are golden.

  10. 10

Flip the toasties and fry for a further couple of minutes with the lid on, until golden and the cheese is melted. If the cheese needs help melting, add about 1 tablespoon of water to the pan and cover it to create steam.

  11. 11

    Slice the toasties and serve.

Notes

The source recommends frying rather than using a grill. It does not specify the weight of each bread or cheese slice; nutrition and gram estimates use typical slice weights.
