Chicken Rice Pizza
A creative and delicious way to use leftover rice to create a crispy, gluten-free pizza crust, topped with a flavorful chicken sauté.

Ingredients
- 2 cup Cooked rice (Approximately 400g)
- 3 Eggs (Can be 4 if they are small)
- 50 ml Water (A splash to help with blending)
- 50 g Grated cheese (For the crust)
- Salt (As needed)
- Black pepper (As needed)
- 1 Chicken breast (One large or two small, diced)
- 0.5 White onion (Chopped)
- 2 tallo Green onion (Chopped)
- 200 g Tomato purée (Estimated based on visual use)
- 150 g Mozzarella cheese (Grated or sliced for melting)
- Oil (For the pizza pan and for sautéing the chicken)

Preheat the oven to 200°C.

Place the cooked rice, eggs, water, grated cheese, salt, and pepper in a blender or food processor.

Process the ingredients until a smooth paste is obtained. If you don't have a blender, you can use an immersion blender or mash very well with a potato masher.

Oil a pizza pan and pour in the rice mixture. Spread a little oil over the top as well.

Bake at 200°C for 20 minutes until the crust is firm and golden brown.

While the crust is baking, cut the chicken breast into cubes and chop the onion and green onion.

In a skillet over high heat with a little oil, brown the chicken cubes.

Add the white onion and green onion to the skillet. Season to taste.

Add the tomato purée and let cook over medium heat for 10 to 15 minutes.

Remove the rice crust from the oven. It should be super crispy.

Spread the chicken with sauce over the rice crust and cover with mozzarella cheese.

Bake at maximum temperature until the cheese is melted and browned.
Notes
If you don't have a blender, you can use an immersion blender or even a potato masher to thoroughly combine the rice and egg. This is an excellent recipe for using up leftover white rice.
