An explosive fusion between classic Venezuelan tequeños and hot dogs (panchos), filled with llanero cheese and sausage, served with a homemade garlic sauce.

Ingredients

  • 500 g All-purpose flour (plain wheat flour)
  • 100 g Butter (cold, for the crumble-like texture)
  • 1 tbsp Salt
  • 1 tbsp Baking powder
  • 1 tbsp Sugar
  • 200 ml Milk (whole)
  • 1 Egg
  • 400 g Llanero Cheese (cut into sticks; can be substituted with sardo or hard cheese)
  • 12 Sausages (for the final filling)
  • 0.5 cup Mayonnaise (for the garlic sauce)
  • 2 clove Garlic (minced, for the sauce)
  • Fresh parsley (to taste, chopped for the sauce)
  • 1 tbsp Lemon juice (for the sauce)
  • Oil for frying (as needed for frying)

Steps

    In a large bowl, mix the flour, salt, baking powder, and sugar. Add the cold butter and create a crumble-like texture by rubbing it with your fingers until no large pieces remain.

    Incorporate the milk and egg into the dry mixture. Mix well and knead until you obtain a smooth and homogeneous dough.

    Let the dough rest covered in a bowl for approximately 30 minutes to allow the gluten to relax and make it easier to stretch.

    While the dough rests, cut the llanero cheese into rectangular sticks.

    Stretch the dough with a rolling pin until it is very thin. Cut long strips approximately 2-3 cm wide.

    To assemble the tequeños, place a cheese stick at the end of a dough strip. First cover the tip of the cheese, then wrap the strip along the stick, slightly overlapping the dough, and finally seal the other end well. It is essential that no gaps remain so the cheese does not leak out during frying.

    Place the tequeños in the freezer for a while (about 15-20 minutes) so they firm up before cooking.

    Prepare the garlic sauce by mixing the mayonnaise, minced garlic, parsley, lemon juice, a splash of milk, salt, and pepper in a container.

    Heat plenty of oil in a pot or deep skillet. Fry the tequeños directly from the freezer until they are golden brown and crispy.

    For the final assembly (the 'operation'), make a longitudinal cut in the hot tequeño, insert a cooked sausage in the center, add the garlic sauce, and garnish to taste.

Notes

If you cannot find llanero cheese, you can use a semi-hard cheese that holds its shape when heated. Make sure to seal the dough very well to avoid disasters in the oil.
