Ingredients
- 1 rotisserie chicken (whole; shredded)
- 1 cup BBQ sauce (your favorite kind)
- 8 slices provolone cheese
- 4 croissants (sliced in half)
- 4 Parmesan crisps (to taste; use 1–2 per sandwich)
- 8 tbsp onion jam
- 8 tbsp unsalted butter
Steps
- 1
Toss the shredded rotisserie chicken with the BBQ sauce until the chicken is fully coated. Set aside.
- 2
Place one slice of provolone on the bottom half of each croissant. Add a generous portion of the BBQ chicken to each, then top with another slice of provolone and 1–2 Parmesan crisps.
- 3
Spread the onion jam evenly over the cut side of each croissant top, then place the tops over the filled bottoms to assemble the sandwiches.
- 4
Set a pan over medium heat and melt 2 tablespoons of butter in it.
- 5
Add one sandwich to the pan and press down gently. Cook for 2–3 minutes per side, until the croissant is golden and crisp, the cheese is melted, and the filling is warmed through.
- 6
Repeat with the remaining sandwiches, adding 2 tablespoons of butter to the pan for each sandwich as needed.
- 7
Enjoy the sandwiches warm.
