Healthy Oil-Free Empanadas
A healthy version of classic Venezuelan empanadas that uses a boiling and air-frying technique to achieve a crispy texture without the need for deep-frying in oil.

Ingredients
- 1 cup Pre-cooked cornmeal (P.A.N. flour type; the amount is estimated for the desired consistency)
- 1 cup Water (Add gradually until a firm dough is obtained)
- Salt (To taste)
- 100 g White cheese (Shredded; or the filling of your choice)

In a bowl, mix the water with salt and gradually add the pre-cooked cornmeal. Knead until the mixture is firm and not watery; this is crucial so it doesn't fall apart during boiling.

Bring a large pot of water to a boil.

Prepare a work surface with parchment paper or a Ziploc-style plastic bag cut in half.

Form a dough ball slightly larger than a golf ball and place it on the plastic or paper.

Fold the plastic over the ball and flatten it with a cutting board or a flat surface until you obtain a very thin circle.

Place a tablespoon of the filling (shredded white cheese) in the center of the dough circle.

Fold the dough over itself to cover the filling, forming a half-moon shape.

Press the edges to seal and use a round container or cutter to trim the excess dough and achieve a perfect half-moon shape.

Place the empanada in the boiling water and cook for 2 minutes.

Carefully remove the empanada from the water and place it in the air fryer.

Cook in the air fryer at 400°F (200°C) for 15 minutes until golden and crispy.

Notes
The most important tip is to ensure the dough remains firm and not too wet to prevent it from breaking during the boiling process. You can vary the filling using shredded beef, chicken, or black beans.
