Ingredients
- 1 tbsp Butter
- 1 White onion (Large; thinly sliced)
- 350 ml Beef stock (Alternatively, use half a beef stock cube diluted in 350 ml water)
- 1 tsp Brown sugar
- 1 Puff pastry (1 sheet)
- 1 Egg (For egg wash)
- 75 g Gruyère cheese (Crumbled or broken into small pieces)
- 3 Fresh thyme (A few sprigs)
- Salt (To taste)
- Black pepper (To taste)
- 1.5 tbsp Honey (Use 1–2 tbsp; drizzle a little over each bite)
Steps
- 1
Thinly slice the onion. Melt the butter in a frying pan over medium heat, then add the onion and fry until it is translucent and beginning to brown.
- 2
Add the beef stock and brown sugar to the pan. Reduce the heat slightly and simmer until the liquid has evaporated and the onions are completely soft, about 20 minutes.
- 3
Preheat the oven to 180°C (360°F). Line a baking tray with baking paper.
- 4
Roll out the puff pastry. Use a large cookie cutter to cut circles, then gently press a smaller cutter into the center of each circle without cutting all the way through.
- 5
Beat the egg and brush it around the pastry edges to make an egg wash.
- 6
Arrange the pastry circles on the lined baking tray. Bake for 10 minutes, until puffed and slightly golden.
- 7
Carefully press the center of each pastry round down with the end of a spoon to make space for the filling.
- 8
Spoon about 1 tablespoon of the softened onions into each pastry center. Add Gruyère pieces, thyme, salt, and pepper.
- 9
Bake for 5 minutes, until the cheese has melted.
- 10
Remove the bites from the oven and drizzle a little honey over each. Serve and enjoy.
Notes
The source does not specify the number of pastry circles or a serving yield; servings are estimated. The optional stock-cube alternative is included, but its use requires replacing the listed beef stock with half a stock cube and 350 ml water.
