Fold and roll the rice paper tightly around the chicken mixture to form a compact roll. Repeat the wetting, filling, and rolling process with the remaining three rice-paper sheets and chicken mixture.

Cut each filled roll into six pieces, producing 24 chicken poppers total. Arrange them in the air-fryer basket in a single layer, leaving space around each piece for air circulation; work in batches if necessary.

Air-fry the poppers at 400°F (200°C) for 14 minutes, or until the rice-paper coating is crisp and the chicken is fully cooked through. If checking with a thermometer, the center should reach 165°F (74°C).

While the poppers cook, stir the Greek yogurt, apple cider vinegar, chopped dill, and salt together in a small bowl. Adjust the vinegar and salt to taste, then serve the dip alongside the hot poppers.
