Crispy Rice Paper Dumplings

Ingredients
- 350 g shrimp (chopped or minced for the filling)
- 6 rice paper (circular sheets)
- 1 manojo green onions (finely chopped)
- 1 garlic (clove, minced)
- 5 g ginger (fresh, grated or minced)
- salt (to taste)
- pepper (to taste)
- 1 tbsp soy sauce

In a medium bowl, mix the chopped shrimp, green onions, garlic, ginger, salt, pepper, and soy sauce until well combined.

Prepare a workstation with a plate of warm water. Quickly dip a rice paper sheet into the water to moisten it and place it on a flat surface.

Spread a portion of the shrimp mixture over the damp rice paper sheet.

Moisten a second rice paper sheet and place it directly on top of the filling and the first sheet, creating a sort of sandwich.

Cut the filled rice paper circle into 4 equal parts (quadrants).

Wrap each section individually, folding the edges of the rice paper around the shrimp filling to seal the dumpling. Repeat the process with the remaining sheets.

Preheat the air fryer to 400°F (200°C).

Place the dumplings in the air fryer basket in a single layer, ensuring they do not touch so they become crispy.

Cook in the air fryer for 8 minutes at 400°F (200°C) until the rice paper is puffed and crispy.
Notes
The recipe makes a total of 12 dumplings (6 per serving). The calorie count per serving is approximately 256 calories with an excellent macro profile for athletes.
