Ingredients
- 250 g Turkey mince
- 3 tbsp Barbecue rub
- Fresh thyme (1 sprig)
- Fresh rosemary (1 sprig)
- 2 Spring onions
- 1 Orange (Zest and juice)
- 2 slices American cheese
- 2 tbsp Cranberry sauce
- 1 tbsp Mayonnaise (Large tablespoon)
- 1 tsp Horseradish sauce
- 1 tsp Dijon mustard (Small teaspoon)
- 1 tsp Truffle oil
- Chives (1 handful)
- 50 g Premade Paxo sage and onion stuffing (Prepare according to package instructions before baking as a thin layer)
- 1 Brioche bun
- Salt (To taste)
- Black pepper (To taste)
- Butter (For toasting the bun; amount not specified)
- Oil (For cooking the patties; amount not specified)
- Water (A splash, for melting the cheese)
Steps
- 1
Put the turkey mince in a bowl. Add the orange zest and juice, barbecue rub, salt, pepper, and spring onions, then mix thoroughly. Divide the mixture into two even balls.
- 2
In a separate bowl, mix the mayonnaise, horseradish sauce, Dijon mustard, truffle oil, and chives. Set the sauce aside.
- 3
Prepare the sage-and-onion stuffing. Spread it relatively thinly on baking paper and bake in the oven until golden and nearly crispy. Let it cool, chop it as finely as possible, and set the crumbs aside. The source does not specify an oven temperature or baking time.
- 4
Toast the brioche bun in a pan with butter until golden, then set it aside.
- 5
In the same pan, add oil and let it get hot. Once very hot, add the two turkey balls and press each down firmly until thin and even.
- 6
Cook the patties for a few minutes, until golden on the first side. Flip them and place a slice of American cheese on each patty.
- 7
Add a splash of water to the pan and cover it with a lid to help the cheese melt quickly. As soon as the cheese has melted, remove the burgers from the pan and let them rest.
- 8
Place the bottom bun on a serving plate and spoon on the horseradish mayo. Add both burgers, then top them with the chopped stuffing crumbs.
- 9
Spread the cranberry sauce on the top bun, place it on the burgers, and serve.
Notes
The source does not specify exact amounts for salt, pepper, butter, cooking oil, or the splash of water. It also gives no oven temperature or time for baking the stuffing, and no exact patty cook time beyond a few minutes per side.
