One-Pot Rice Cooker Gyudon

A high-protein Japanese-inspired beef rice bowl made entirely in a rice cooker. Thinly sliced eye of round beef, jasmine rice, onion, ginger, and a savory soy-mirin broth cook together, then are finished with jammy eggs and green onion.

Ingredients

  • 10 oz Thinly sliced eye of round beef (Shabu-shabu style; add raw to the rice cooker)
  • 0.667 cup Jasmine rice (Uncooked/raw; rinse before using)
  • 0.333 cup Beef bone broth
  • 2 tbsp Soy sauce
  • 1 tbsp Mirin
  • 0.5 tsp Dashi powder
  • 1 Yellow onion (Thinly slice or chop)
  • 0.5 tbsp Fresh ginger (Finely grated or minced)
  • 2 Eggs (Boil for 6 minutes for jammy yolks)
  • 1 Green onion (Thinly slice for topping)

Steps

    Thinly slice the green onion and set it aside for topping.

    Rinse the uncooked jasmine rice under cool water until the water runs mostly clear, then drain well.

    Add the rinsed rice to the rice cooker. Add the thinly sliced eye of round beef, beef bone broth, soy sauce, mirin, dashi powder, yellow onion, and ginger. Spread the ingredients evenly so the rice and beef cook together.

    Close the rice cooker and cook for 30 minutes, or until the rice is tender and the beef is cooked through. If your rice cooker has a dedicated rice or white-rice setting, use that setting and confirm the beef reaches 160°F / 71°C.

    While the rice cooks, bring a pot of water to a full boil. Carefully lower in the eggs and boil for 6 minutes.

    Immediately transfer the boiled eggs to an ice bath. Chill them until cool enough to handle, then peel carefully to preserve the soft, jammy centers.

    When the rice cooker finishes, gently stir the gyudon mixture to distribute the beef, onion, and sauce throughout the rice.

    Divide the gyudon between two bowls. Place one jammy egg in each bowl and top each serving with half of the sliced green onion. Serve immediately.
