Air Fryer Pa Dak (Korean Fried Chicken)
A high-protein, low-calorie version of Korean fried chicken (Pa Dak) that uses coarse potato starch and an air fryer for a crispy finish without deep frying. It's served with a signature citrus soy dressing and plenty of fresh green onions.

Ingredients
- 14 oz boneless, skinless chicken thighs (raw, chopped into 2-inch cubes)
- 0.5 tsp white pepper
- 1.5 tbsp garlic (minced)
- 1 tbsp ginger (minced)
- 1 tbsp Shaoxing wine
- 2 tbsp soy sauce (for chicken marinade)
- 0.75 cup coarse potato starch
- 1 egg white (no yolk)
- 1 second spray cooking oil spray
- 4 green onion (sliced into very thin long strips)
- 0.5 tbsp wasabi
- 0.5 tbsp brown sugar
- 2 tbsp soy sauce (for sauce)
- 1 tbsp rice vinegar
- 2 tbsp water
- 0.5 tbsp lemon juice

Slice your green onions into very thin long strips.

Chop your chicken thighs into 2-inch cubes.

In a bowl, add your chicken, white pepper, minced garlic, minced ginger, Shaoxing wine, egg white, and 2 tablespoons of soy sauce. Mix well and set aside to marinate.

Pour the coarse potato starch onto a plate.

Dip each piece of marinated chicken into the potato starch until it is fully and evenly coated.

Spray your air fryer basket with cooking oil.

Place the coated chicken pieces inside the air fryer and spray the tops with a quick, light coat of spray oil.

Cook in the air fryer at 390°F (200°C) for 13-15 minutes, flipping the chicken halfway through, until it is crispy and golden brown.

In a small bowl, whisk together the wasabi, brown sugar, 2 tablespoons of soy sauce, rice vinegar, water, and lemon juice to make the sauce.

To serve, plate half of the crispy chicken nuggets, top with half of the thinly sliced green onions, and pour half of the sauce over the top.
Notes
Coarse potato starch is the key ingredient for achieving a restaurant-style crunch in the air fryer. If you don't have an air fryer, you may be able to bake these, though the texture will vary. For an alcohol-free alternative to Shaoxing wine, you can often use dry sherry or omit it.
