Ingredients

  • 1 can Sweetened condensed milk (14 oz can; use multiple cans if desired; for boiling, avoid pull-top lids if possible)
  • Water (For boiling or water bath)

Steps

  1. 1

For the boiling method: Remove the paper label from the unopened can of sweetened condensed milk.

  2. 2

Place the unopened can into a large, deep pot and fill with enough water to cover the can by 1 to 2 inches.

  3. 3

Place the pot over medium-high heat and bring the water to a boil.

  4. 4

Once boiling, reduce the heat to a simmer and cook for 2 hours for a light caramel color, or 3 hours for a deeper, richer flavor.

  5. 5

Check the water level frequently and replenish with hot water from a kettle as needed to ensure the can remains submerged by at least an inch at all times.

  6. 6

Remove the can from the water and let it cool completely to room temperature before opening.

  7. 7

For the baking method: Preheat your oven to 425°F (220°C).

  8. 8

Open the can of sweetened condensed milk and pour the contents into a glass pie dish or similar shallow baking dish.

  9. 9

Cover the dish tightly with aluminum foil to prevent the milk from drying out.

  10. 10

Place the covered dish into a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the side of the pie dish.

  11. 11

Bake for approximately 1 hour and 45 minutes, or until the desired deep golden color is achieved.

  12. 12

Carefully remove from the oven, discard the foil, and whisk the warm dulce de leche until smooth and silky.

Notes

Storage: Unopened boiled cans can be stored in the pantry for up to 3 months. Once opened (or if using the baking method), store in a sealed container in the refrigerator for up to 2 weeks. Safety Warning: Never open a boiled can while it is still hot, as the pressurized contents can spray and cause burns.
