Ingredients

  • 1.5 cup All-purpose flour
  • 1 cup Granulated sugar (for the cake)
  • 1.5 tsp Baking powder
  • 0.5 tsp Salt
  • 0.5 cup Unsalted butter (softened)
  • 3 Egg whites (large)
  • 2 tsp Vanilla extract (divided)
  • 0.5 cup Whole milk (for the cake)
  • 2 cup Whole milk (for the pastry cream)
  • 4 Egg yolks (large)
  • 0.5 cup Granulated sugar (for the pastry cream)
  • 0.25 cup Cornstarch
  • 2 cup Heavy cream (chilled)
  • 0.25 cup Powdered sugar
  • 2 cup Fresh strawberries (hulled and sliced)
  • 1 cup Fresh blueberries
  • 1 cup Fresh raspberries

Steps

    Preheat your oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.

    In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

    In a large bowl or stand mixer, cream the softened butter and 1 cup of granulated sugar together until light and fluffy.

    Add the egg whites one at a time, beating well after each addition. Mix in 1 teaspoon of vanilla extract.

    Add the dry ingredients to the butter mixture in three additions, alternating with the 1/2 cup of milk, beginning and ending with the dry ingredients. Mix until just combined.

    Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely, then cut into 1-inch cubes.

    To make the pastry cream, heat 2 cups of milk in a medium saucepan over medium heat until it just begins to simmer.

    In a separate bowl, whisk together the egg yolks, 1/2 cup sugar, and cornstarch until smooth and pale.

    Slowly temper the egg mixture by whisking in a small amount of the hot milk, then gradually add the rest of the milk while whisking constantly.

    Return the mixture to the saucepan and cook over medium heat, whisking constantly, until the mixture thickens and large bubbles pop on the surface.

    Remove from heat, stir in the remaining 1 teaspoon of vanilla, and transfer to a bowl. Cover with plastic wrap pressed directly onto the surface to prevent a skin from forming. Chill completely.

    In a chilled bowl, whip the heavy cream and powdered sugar until stiff peaks form.

    To assemble the trifle, place a layer of cake cubes at the bottom of a trifle dish. Add a layer of fresh berries, followed by a layer of pastry cream and a layer of whipped cream.

    Repeat the layers until the dish is full, finishing with a decorative layer of whipped cream and berries on top. Chill for at least 2 hours before serving to allow flavors to meld.

Notes

For a shortcut, you can use a store-bought pound cake or angel food cake. Ensure the pastry cream is completely cold before assembling to prevent the whipped cream from melting.
