10-Minute Chinese Chicken Chopped Salad
A viral, refreshing, and protein-packed salad that tastes like it came from a restaurant. It features thinly sliced greens, edamame, and shredded chicken tossed in a zesty ginger-lime soy dressing.

Ingredients
- 6 cup romaine lettuce (very thinly sliced)
- 2 cup green cabbage (very thinly sliced)
- 1 bunch green onion (very thinly sliced)
- 1 cup edamame
- 0.33 cup cilantro (finely chopped)
- 2.5 cup rotisserie chicken (shredded)
- 1 tbsp toasted sesame seeds
- 1 tbsp avocado oil
- 1 tbsp toasted sesame oil
- 0.25 cup dark soy sauce (or low sodium soy sauce)
- 1 tbsp maple syrup
- 3 tbsp rice vinegar
- 1 tbsp ginger paste (grated)
- 1 lime juice (juice of 1 lime)

Chop all of your vegetables, including the romaine lettuce, green cabbage, green onion, and cilantro.

Add the chopped vegetables, edamame, shredded rotisserie chicken, and toasted sesame seeds to a large salad bowl.

In a separate small bowl, combine the avocado oil, toasted sesame oil, dark soy sauce, maple syrup, rice vinegar, grated ginger paste, and lime juice.

Whisk the dressing ingredients together until thoroughly combined.

Pour the dressing over the top of the salad ingredients.

Toss the salad well to ensure everything is evenly coated in the dressing and enjoy immediately.
Notes
For a vegan version, substitute the rotisserie chicken with extra edamame, tofu, or a plant-based chicken alternative. If you don't have maple syrup, honey or agave can be used as a sweetener.
