Better For You General Tso’s Chicken Glass Noodles
A healthier, non-fried version of General Tso's chicken served over Korean glass noodles. These sweet potato noodles are naturally gluten-free and maintain a perfect chewy texture without clumping.

Ingredients
- 1 lb boneless, skinless chicken thighs (cut into bite-size pieces)
- 0.33 cup arrowroot flour or cornstarch (for coating chicken)
- 3 tbsp avocado oil
- 0.33 cup low sodium soy sauce or coconut aminos
- 2 tbsp toasted sesame oil
- 0.66 cup hoisin sauce
- 3 tbsp rice wine vinegar
- 2 garlic (cloves, mashed)
- 2 tsp fresh ginger (grated)
- 2 tsp arrowroot flour or cornstarch (for sauce)
- 0.25 cup coconut sugar or brown sugar
- 10.5 oz korean style glass noodles (3 x 3.5-oz packages)
- green onion (chopped, for garnish)
- sesame seeds (for garnish)

Toss the bite-size chicken pieces in 1/3 cup corn starch (or arrowroot flour) until evenly coated and set aside.

In a bowl or mixing cup, whisk together the soy sauce, toasted sesame oil, hoisin sauce, rice wine vinegar, mashed garlic, grated ginger, 2 tsp corn starch, and sugar until there are no clumps. Set the sauce aside.

Add the avocado oil to a large pan over medium heat. Wait until the pan is very hot before proceeding.

Add the chicken to the hot pan. Leave undisturbed for 4 minutes to allow a crust to form.

Scrape the pan and toss the chicken, continuing to cook for another 4-5 minutes until the chicken is almost cooked through (browned on the outside and no longer pink).

Pour the prepared sauce into the pan and toss the chicken to coat thoroughly.

Turn the heat to low, cover the pan, and let cook for 10 minutes. After 10 minutes, turn off the heat, remove the cover, and stir.

While the chicken is simmering, bring a large pot of water to a boil. Cook the glass noodles according to package directions, stirring frequently to prevent clumping.

Drain the noodles and rinse them under cold water, then set aside.

To serve, plate the noodles on the bottom, top with the General Tso's chicken, and toss to combine.

Garnish with chopped green onions and sesame seeds.
Notes
Korean glass noodles are made from sweet potato starch. They are naturally gluten-free and hold their texture better than rice noodles. Ensure the pan is very hot before adding the chicken to ensure it browns properly without sticking.
