Ingredients
- 0.5 cup olive oil
- 0.5 cup white wine vinegar
- 2 oz diced pimento (Drained; one bottle.)
- 3 tbsp fresh parsley (Chopped.)
- 3 tbsp green onions (Minced.)
- 3 garlic (Cloves, minced.)
- 1 tsp sugar
- 0.75 tsp dried basil
- 0.5 tsp salt
- 0.5 tsp ground black pepper
- 8 oz Cheddar cheese (One block.)
- 8 oz cream cheese (One package; keep cold for slicing.)
Steps
- 1
Add the olive oil, white wine vinegar, drained diced pimento, chopped parsley, minced green onions, minced garlic, sugar, dried basil, salt, and ground black pepper to a jar with a tight-fitting lid.
- 2
Seal the jar and shake vigorously until the marinade is well blended.
- 3
Cut the cheddar block in half lengthwise, then cut it crosswise into 1/4-inch slices to form squares.
- 4
Cut the cold cream cheese into matching 1/4-inch slices to form squares.
- 5
Arrange the cheddar and cream cheese squares alternately in a shallow baking dish, standing the slices on edge. Use either a single row or two parallel rows, depending on the size of the dish.
- 6
Pour the marinade from the jar over the arranged cheese. Cover the dish and refrigerate for at least 6 hours or overnight.
- 7
Transfer the marinated cheese slices to a serving platter, preserving the alternating arrangement.
- 8
Spoon some of the extra marinade over the cheese before serving.
Notes
The video transcript says the cheese can be marinated for at least 4 hours and kept for up to about 5 days, while the written directions specify at least 6 hours or overnight. The written directions were used for the primary timing. Keep refrigerated.
