Ingredients

  • 4 tbsp butter
  • 0.5 onion (chopped)
  • 2 carrots (thinly sliced)
  • 2 celery ribs (thinly sliced)
  • 2 cloves garlic (minced)
  • salt (to taste)
  • black pepper (to taste)
  • 1 tsp poultry seasoning
  • 0.25 tsp dried thyme
  • 3 tbsp flour
  • 2.5 cup chicken broth
  • 1 cup milk
  • 1 lb gnocchi
  • 0.5 cup peas
  • 2 cup cooked shredded chicken

Steps

  1. 1

Melt the butter in a Dutch oven or pot over medium heat. Add the chopped onion, sliced carrots, and sliced celery. Sauté for a few minutes, until the vegetables have softened.

  2. 2

Add the minced garlic, poultry seasoning, and dried thyme. Stir for 1 minute.

  3. 3

Sprinkle in the flour and stir for 1–2 minutes.

  4. 4

Slowly pour in the chicken broth, whisking continuously. Add the milk, continuing to whisk until combined.

  5. 5

Bring the mixture to a bubble, then reduce the heat to a simmer. Cook, stirring occasionally, for about 5–7 minutes, until it is starting to thicken.

  6. 6

Season with salt and pepper to taste.

  7. 7

Bring the mixture back to a bubble. Add the gnocchi and cook, stirring frequently so it does not stick to the bottom of the pot.

  8. 8

Stir in the peas and shredded chicken until combined. Cook for another 3–5 minutes.

  9. 9

Taste and adjust the seasonings as needed, then serve.
