Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 0.5 onion (chopped)
  • 1 packet taco seasoning
  • 0.5 cup water
  • 4 oz green chilies (1 can)
  • 15 flour tortillas (6-inch size)
  • 16 oz salsa (divided)
  • 1 cup sour cream (divided)
  • 3 cup Mexican cheese blend (divided)

Steps

  1. 1

Preheat your oven to 375°F (190°C).

  2. 2

Heat 1 tablespoon of olive oil in a medium skillet over medium heat.

  3. 3

Add the 1/2 chopped onion to the skillet and sauté for a few minutes until softened.

  4. 4

Add 1 lb of ground beef to the skillet. Cook, breaking it up with a spoon, until the meat is no longer pink.

  5. 5

Add the packet of taco seasoning, 1/2 cup of water, and 4 oz of green chilies to the beef mixture.

  6. 6

Stir to combine and continue cooking until the liquid has thickened.

  7. 7

Prepare a 9x13-inch baking dish. Layer 5 flour tortillas across the bottom to cover it completely.

  8. 8

Spread 1/3 of the salsa (about 5.3 oz) over the tortillas.

  9. 9

Spread 1/2 of the cooked beef mixture over the salsa.

  10. 10

Spread 1/2 cup of sour cream over the beef layer.

  11. 11

Sprinkle 1 cup of the Mexican cheese blend over the sour cream.

  12. 12

Repeat the layering process: add 5 more tortillas, another 1/3 of the salsa, the remaining half of the beef mixture, the remaining 1/2 cup of sour cream, and another 1 cup of cheese.

  13. 13

Top with the final 5 tortillas, the remaining 1/3 of the salsa, and the final 1 cup of cheese.

  14. 14

Bake in the preheated oven at 375°F for 30-35 minutes until the cheese is melted and bubbly.

Notes

This recipe is great for feeding a crowd or for a Cinco de Mayo party. Some commenters suggest using corn tortillas instead of flour to avoid a 'soggy' texture, though the original recipe specifically calls for flour.
