Ingredients

  • 2 Rack of pork ribs (Membrane removed from the bone side; approximately 2.4 kg total, depending on the size of the racks.)
  • Salt (To taste.)
  • Black pepper (To taste.)
  • 2 tbsp Garlic powder (For the marinade.)
  • 1 tbsp Sweet paprika (For the marinade.)
  • 1 tbsp Dijon mustard (For the marinade.)
  • 1 tbsp Apple cider vinegar (For the marinade.)
  • 50 ml Extra-virgin olive oil (For the marinade.)
  • 2 tbsp Dijon mustard (For the M&M sauce.)
  • 4 tbsp Honey (For the M&M sauce.)
  • 30 ml Soy sauce (For the M&M sauce.)

Steps

    Remove the membrane covering the underside of the racks, on the bone side. You can lift one corner with the tip of a knife and pull it away using a paper towel for a better grip. Removing it helps the meat become more tender and juicy.

    Season both sides of the ribs with salt and black pepper to taste.

    Prepare the marinade by mixing the garlic powder, sweet paprika, Dijon mustard, apple cider vinegar, and extra-virgin olive oil in a bowl until evenly combined.

    Rub the racks all over with the marinade, coating the meat and edges well so the flavor is distributed evenly.

    Wrap each rack individually in aluminum foil. Use a double layer to reduce the risk of steam and juices escaping during cooking.

    Preheat the oven to 200 °C.

    Place the foil-wrapped ribs on a baking sheet and bake for 1 hour at 200 °C.

    Turn off the oven without opening the door and leave the packets inside for an additional 1 hour and 30 minutes, using the residual heat. Do not open the oven during this time to prevent the temperature from dropping.

    Remove the baking sheet from the oven, carefully open the packets—hot steam will escape—and discard the aluminum foil. Place the ribs on a clean baking sheet or on an oven rack.

    Mix the Dijon mustard, honey, and soy sauce in a bowl until fully combined and smooth.

    Glaze the ribs with the sauce, coating them generously on all sides. Reserve some sauce if you would like to apply a second layer before serving.

    Preheat the oven again to 250 °C.

    Bake the uncovered ribs for approximately 10 minutes at 250 °C, until the surface is well browned and the sauce looks caramelized. Watch them closely because the honey can burn quickly.

    Let the ribs rest for a few minutes, cut them between the bones, and serve hot.

Notes
