Ingredients

  • 1 package Shin Ramyun (including noodles, soup base, and vegetable flakes)
  • 1 tbsp Kewpie Mayo
  • 1 Egg (large, raw)
  • 1 clove Garlic (minced)
  • 550 ml Water (for boiling noodles)
  • 1 Green onion (chopped, for garnish)
  • Sesame seeds (for garnish)

    Bring 550ml of water to a boil in a medium pot.

    Add the dried noodles and the vegetable flake packet to the boiling water. Cook for 4-5 minutes, or until the noodles reach your desired texture.

    While the noodles are cooking, prepare the sauce base in a serving bowl. Add one tablespoon of Kewpie mayo, one raw egg, the minced garlic, and the entire soup base powder packet.

    Whisk the mayo, egg, garlic, and soup base together vigorously until the mixture is smooth and well-combined.

    Once the noodles are finished, pour a small amount of the hot noodle water (about 2-3 tablespoons) into the bowl with the sauce mixture and whisk quickly to temper the egg and create a creamy consistency.

Notes

The residual heat from the noodles and the small amount of boiling water 'cooks' the egg enough to thicken the sauce without scrambling it. Using Kewpie mayo (Japanese mayo) is essential for the specific flavor profile, as it is richer and slightly sweeter than American mayo.
