Ingredients

- 14 oz Sweetened condensed milk (One standard can)

Add the sweetened condensed milk to the melted butter. Stir continuously with a heatproof spatula so the condensed milk does not scorch on the bottom of the pan.

Add the shredded coconut and mix thoroughly until evenly distributed. Continue cooking and stirring until the mixture becomes very thick and pulls away from the sides and bottom of the pan, about 10–15 minutes. It should resemble a firm coconut brigadeiro or soft dough.

Transfer the hot coconut mixture to the prepared greased dish. Spread and flatten it into an even layer, then let it cool until firm enough to handle, about 30 minutes at room temperature or 15 minutes in the refrigerator.

When cool, grease your hands lightly with butter or neutral oil. Scoop out portions of the coconut mixture and roll them between your palms into small, even balls, about 1½ inches / 4 cm wide. Set the balls on parchment.

Put the granulated sugar and optional water in a clean, dry saucepan. Heat over medium heat, swirling the pan occasionally, until the sugar melts and turns pale golden brown. Watch closely: caramel can go from golden to burnt quickly.

Working carefully, roll or spoon the hot caramel over each coconut ball so it is coated in a thin golden shell. Use a fork or two skewers to turn the balls, and avoid touching the caramel because it is extremely hot.

Place the coated coconut orbs on parchment or a silicone mat and leave them undisturbed until the caramel hardens and the candies are cool, about 10–15 minutes. Serve once the shells are set.
Notes
