Celtics Spring Rolls
Crispy vegetarian spring rolls inspired by the Boston Celtics, filled with cabbage, carrot, and glass noodles, wrapped in a light homemade dough and fried until golden brown.

Ingredients
- 0.5 Onion (chopped)
- 2 Garlic (cloves, minced)
- 2 cup Cabbage (shredded or finely chopped)
- 1 Carrot (shredded)
- 3 Green onion (chopped)
- Salt (to taste)
- 0.5 tsp Ground ginger
- 1 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 100 g Glass noodles (already cooked)
- 1 cup Wheat flour (for the dough)
- 0.75 cup Water (amount needed for liquid consistency)
- Vegetable oil (for frying)
- Sweet and sour sauce (for serving)

In a pan with a little oil, sauté the chopped onion and garlic until fragrant.

Add the shredded cabbage, shredded carrot, and chopped green onion to the pan. Mix the vegetables well.

Season the mixture with salt, ground ginger, soy sauce, and oyster sauce.

Incorporate the already cooked glass noodles into the vegetable mixture, combine everything perfectly, and remove from heat to let cool.

For the dough, mix flour, a pinch of salt, and enough water in a bowl until you get a smooth, liquid consistency that can be spread.

Heat a non-stick pan over medium heat. Using a pastry brush, spread a thin layer of the flour mixture in the pan forming a circle.

When the edges lift, flip the dough briefly and remove. Repeat until the mixture is finished.

Place a portion of the filling on one end of each sheet of dough.

Roll the spring rolls, sealing the edges with a bit of the same liquid flour mixture.

Heat plenty of oil in a pan or pot and fry the rolls until they are well-browned and crispy.

Drain the excess oil and drizzle with sweet and sour sauce before serving.
Notes
The brush-made homemade dough allows for very thin sheets similar to commercial ones. Make sure the filling is dry to prevent the dough from breaking while frying.
