Celtics Spring Rolls
Crispy vegetarian spring rolls inspired by the Boston Celtics, filled with sautéed vegetables and Chinese noodles, wrapped in a light homemade dough and fried until golden brown.

Ingredients
- 0.5 Onion (finely chopped)
- 2 Garlic (cloves, minced)
- 2 cup White cabbage (shredded or finely chopped)
- 1 Carrot (grated)
- 3 Scallions (chopped)
- Salt (to taste)
- 0.5 tsp Ground ginger
- 1 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 100 g Chinese noodles (already cooked)
- 1 cup Wheat flour (for the dough)
- 0.75 cup Water (as needed for a liquid consistency)
- Vegetable oil (enough for frying)
- Sweet and sour sauce (for serving)

In a skillet with a little oil, sauté the onion and minced garlic until fragrant.

Add the shredded cabbage, grated carrot, and chopped scallions to the skillet. Mix the vegetables well.

Season the mixture with salt, ground ginger, soy sauce, and oyster sauce.

Incorporate the cooked Chinese noodles into the vegetable mixture, combine everything perfectly, and remove from heat to let cool.

To prepare the dough, mix flour, a pinch of salt, and enough water in a bowl until you get a smooth, liquid consistency that can be spread.

Heat a non-stick skillet over medium heat. Using a pastry brush, spread a thin layer of the flour mixture onto the skillet, forming a circle.

Cook briefly until the dough releases, flip to finish cooking, and remove. Repeat until the dough is finished.

Place a portion of the vegetable and noodle filling at one end of each sheet of dough.

Begin rolling, sealing the edges with a little bit of the same liquid flour mixture so they are well-sealed.

Heat plenty of oil in a skillet or saucepan and fry the rolls until they are golden brown and crispy.

Drain the excess grease and serve hot drizzled with sweet and sour sauce.
Notes
The dough should be liquid enough to be applied with a brush to the skillet, similar to a very thin crepe. Make sure the filling is dry to prevent the dough from tearing during frying.
