Weights are estimates. Together, the ingredients weigh about 530 g before cooking, which is about 135 g per serving.
Steps
Roast the sweet potato at 200°C (400 °F) (390°F (200 °C)) for 45 to 60 minutes until completely soft.
Extract 260 g of the sweet potato flesh and mash it until you obtain a smooth puree.
Chill the sweet potato puree in the refrigerator for at least 30 minutes (or overnight) for a crunchier cereal.
Preheat the oven to 180°C (350 °F) (355°F (180 °C)).
Mix the sweet potato puree, oats, melted butter, 40 g of the honey, vanilla extract, and sea salt until well combined.
Firmly press the mixture onto a parchment-lined baking sheet, forming a rectangle approximately 1 to 1.5 cm thick.
Bake for 20 to 25 minutes until lightly golden brown.
While still warm, break the dough into small pieces or clusters.
Drizzle the remaining 20 g of honey over the pieces, toss gently, and spread them out again on the tray.
Bake for another 15 to 25 minutes, flipping the pieces every 5 to 10 minutes until they are well-browned and crunchy.
Allow to cool completely before serving. Store in an airtight container.
Notes
For a lower-fat version, one comment suggests substituting the butter with banana. It can also be prepared in an air fryer for smaller and quicker portions.
