Weights are estimates. Together, the ingredients weigh about 550 g before cooking, which is about 275 g per serving.
Steps
Cook the 200g of organic noodles according to the package instructions until al dente.
In a large mixing bowl, combine the 3 cloves of garlic, 2 tablespoons of crunchy peanut butter, 2 tablespoons of chopped peanuts, 1/4 cup of tahini, 2 tablespoons of tamari, 2 tablespoons of chilli oil, 1 tablespoon of lime juice, 5 tablespoons of hot water, and 2 tablespoons of sesame seeds.
Whisk the mixture vigorously until the sauce becomes creamy and glossy. The hot water is essential here to help the fats from the tahini and peanut butter emulsify perfectly.
Add the cooked noodles and most of the chopped spring onions to the bowl.
Toss the noodles thoroughly in the sauce until every strand is evenly and thickly coated.
Garnish the dish with the remaining chopped spring onions and an extra sprinkle of sesame seeds. Serve immediately while warm.
Notes
The hot water is the key to the emulsion; if the sauce feels too thick after adding the noodles, you can add an extra splash of hot water. For extra heat, drizzle with more chili oil before serving.
