  • 1.25 cup Full-fat almond milk

  • 1 tsp Pure vanilla extract (for the oat base)
  • Pink Himalayan salt (a pinch)
  • 0.5 tbsp Raw honey (for the topping)
  • 0.25 tsp Pure vanilla extract (for the topping)
  • 30 g Vanilla protein powder (clean organic/gum-free)
  • 1.5 cup Full-fat dairy-free yoghurt (such as coconut or almond yogurt)

Steps

    In a medium mixing bowl, combine the rolled oats, 3 tablespoons of raw cacao powder, chia seeds, and a pinch of pink Himalayan salt. Stir until the dry ingredients are well distributed.

    Add the cooled espresso, full-fat almond milk, 2 tablespoons of raw honey, and 1 teaspoon of vanilla extract to the dry mixture. Stir thoroughly to ensure no dry pockets remain and the honey is fully incorporated.

    Transfer the oat mixture into a sealable glass container or divide it into individual jars, smoothing the top with a spoon.

    Prepare the protein topping by placing the dairy-free yogurt in a separate bowl. Whisk in the 30g of vanilla protein powder, 1/2 tablespoon of raw honey, and 1/4 teaspoon of vanilla extract until the mixture is smooth and creamy.

    Spread the protein yogurt mixture evenly over the top of the oats in the glass container, creating a distinct layer similar to the mascarpone layer in a tiramisu.

    Use a fine-mesh sieve to sift a light layer of extra cacao powder over the top of the yogurt layer for garnish.
