Ingredients

  • 29 ladyfingers (Use 28–30; briefly soak each one in the simple syrup.)
  • 0.75 cup granulated sugar
  • 1 cup water
  • 0.5 tsp pure vanilla extract (For the simple syrup.)
  • 8 oz mascarpone cheese (Chilled.)
  • 4 oz cream cheese (Block-style, chilled.)
  • 1 cup powdered sugar
  • 1.5 cup heavy whipping cream (Chilled.)
  • 1.5 tsp pure vanilla extract (For the chantilly cream.)
  • 0.5 tsp almond extract
  • 7 cup fresh berries (Mixed berries; halve or quarter larger strawberries. The author’s example mix: 1 lb strawberries, 1 pint blueberries, and 6 oz each blackberries and raspberries.)
  • 0.333 cup mixed berry jam (Mix with half the berries; more if needed. Reserve the other half of the berries for serving. For the optional topping, the source recommends about 2 tablespoons jam, but says the berries can also be served plain.)

Steps

  1. 1

In a small saucepan, combine the water and granulated sugar. Simmer until the sugar is fully dissolved.

  2. 2

Stir in ½ teaspoon vanilla extract. Pour the syrup into a wide, shallow bowl and set it aside to cool to room temperature. Continue with the chantilly cream while it cools.

  3. 3

Using a stand mixer with the paddle attachment (preferred), or a hand mixer, beat the mascarpone, cream cheese, and powdered sugar until smooth and combined.

  4. 4

If using a stand mixer, scrape excess mixture from the paddle, remove it, and switch to the whisk attachment. With the mixer running at medium speed, slowly pour in the heavy cream, followed by 1½ teaspoons vanilla extract and ½ teaspoon almond extract.

  5. 5

Increase the mixer speed to medium-high and beat until stiff peaks form, stopping occasionally to scrape down the bowl. Refrigerate the chantilly cream until the syrup is cool and you are ready to assemble.

  6. 6

Right before assembly, toss half of the mixed berries with ⅓ cup berry jam.

  7. 7

Tightly cover the remaining berries and refrigerate them until just before serving.

  8. 8

Set out an 11 × 7 × 2-inch baking dish, or a similar-sized dish. Briefly dip each ladyfinger into the cooled syrup, turning it to coat both sides.

  9. 9

Arrange one even layer of soaked ladyfingers across the bottom of the dish, breaking pieces as needed to fit. The author used 13½ ladyfingers for this layer.

  10. 10

Spread half of the chantilly cream evenly over the ladyfingers.

  11. 11

Top the cream with all of the berries tossed with jam. Spoon over any juices that have accumulated.

  12. 12

Repeat with another layer of soaked ladyfingers. Press down on them to pack the layers firmly, as the author recommends.

  13. 13

Spread the remaining chantilly cream evenly over the second ladyfinger layer.

  14. 14

Cover the dish tightly and refrigerate for at least 8 hours, preferably overnight.

  15. 15

Right before serving, toss the reserved berries with about 2 tablespoons berry jam, or leave them plain. Gently spoon the berries over the tiramisu and serve chilled.

Notes

Store covered in the refrigerator and serve chilled. Best within two days of assembling. The source gives an example berry mix, but says to use any combination of fresh berries. The 9 × 13-inch pan comment recommends increasing all quantities by 1.5 times. The serving jam amount is optional; the source advises avoiding much more than about 2 tablespoons on top because it can make the topping too wet.
