Ingredients

  • 25 Oreo Thins (for the crust)
  • 3 tbsp butter (melted)
  • 1 tbsp light cream cheese (can use up to 2 tbsp)
  • 0.5 cup dark chocolate chips (optional middle layer; 85g or 3oz)
  • 1 tsp coconut oil (optional for middle layer)
  • 0.5 cup heavy whipping cream
  • 1 cup FAGE 0% Greek yogurt
  • 0.75 cup low-fat cottage cheese (blended until smooth)
  • 1 pack sugar free vanilla pudding mix
  • 1 tsp vanilla extract
  • salt (a pinch)
  • 4 Oreo Thins (crushed; optional for ice cream mix-in)

Steps

    Crush 25 Oreo Thins into fine crumbs. In a bowl, combine the crumbs with 3 tablespoons of melted butter and 1-2 tablespoons of light cream cheese. Mix until the texture resembles wet sand.

    Press the Oreo mixture firmly into the bottom of a parchment-lined square pan to form the crust. Reserve a small portion of the crust mixture if you wish to have a top layer, or press it all into the bottom.

    If using the optional middle layer, melt 1/2 cup dark chocolate chips with 1 teaspoon of coconut oil. Pour this over the crust and freeze for 30 minutes to set. Note: The author suggests skipping this as it can make the layers slide apart.

    In a large mixing bowl, combine 1/2 cup heavy whipping cream, 1 cup FAGE 0% Greek yogurt, 3/4 cup blended low-fat cottage cheese, 1 pack of sugar-free vanilla pudding mix, 1 teaspoon vanilla extract, and a pinch of salt.

    Whisk or blend the mixture until thick and creamy. The pudding mix will act as a stabilizer to give it an ice cream-like consistency.

    Fold in 4-5 crushed Oreo Thins if desired for extra texture.

    Pour the ice cream mixture over the prepared crust (or chocolate layer). Smooth the top with a spatula.

    Freeze for at least 4 hours, or overnight for the best results.

    Once fully set, remove from the pan and cut into 9 even squares to serve.

Notes

The author recommends skipping the chocolate middle layer as it makes the top layer difficult to stick. For the cottage cheese, ensure it is blended completely smooth before adding to the mix to avoid a lumpy texture. Macros per piece (if cut into 9): 266 cal, 7g Protein, 23g Carbs, 17g Fat.
