Weights are estimates. Together, the ingredients weigh about 1.78 kg before cooking, which is about 890 g per serving.
Steps
Preheat oven to 400°F (200 °C) (200°C (400 °F)). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft.
Boil the peeled and cubed potatoes in salted water until fork-tender, about 15-20 minutes.
While potatoes boil, season the chicken cutlets with salt, pepper, garlic powder, and paprika. Dredge lightly in flour, shaking off excess.
In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Sear the chicken until golden brown on both sides and cooked through. Remove and set aside.
In the same skillet, add another tablespoon of butter and sauté the diced shallot and sun-dried tomatoes until fragrant.
Deglaze the pan with chicken broth, then stir in the heavy cream and red pepper flakes. Bring to a simmer.
Stir in the grated parmesan cheese until the sauce thickens. Return the chicken to the pan and spoon the sauce over it. Garnish with fresh basil.
Drain the potatoes. Mash them with the remaining butter and the cloves of roasted garlic squeezed out of their skins. Season with salt and pepper to taste.
In a separate pan, sauté the broccolini with a little olive oil, salt, pepper, and a squeeze of lemon juice until tender-crisp.
Serve the Marry Me Chicken alongside the roasted garlic mashed potatoes and lemon pepper broccolini.
Notes
The 'Marry Me Chicken' sauce should be thick enough to coat the back of a spoon. If it's too thick, add a splash more broth.
