Weights are estimates. Together, the ingredients weigh about 255 g before cooking, which is about 65 g per serving.

Steps

  1. If making mash, bring a pot of salted water to a boil. Add the peeled, cut potatoes and boil until softened.

  2. While the potatoes cook, season the chicken with oil, salt, pepper, oregano, and smoked paprika.

  3. Heat olive oil in a pan and add the seasoned chicken. Cook for 6–7 minutes, then turn it over.

  4. Add a small spoonful of butter to the pan and cook the chicken evenly on both sides. Remove it from the pan and set aside.

  5. In the same pan, add the diced white onion and chopped garlic. Cook for a few minutes, until the onion has softened.

  6. Add the cherry tomatoes and cook for a further 3–4 minutes.

  7. Add the chopped sun-dried tomatoes, tomato puree, 250 ml chicken stock, and single cream. Mix thoroughly, then simmer for a few minutes.

  8. Add the spinach, Parmesan, and paprika to the sauce and mix together.

  9. Return the chicken to the pan and cook in the sauce for 3–4 minutes.

  10. While the chicken cooks in the sauce, remove the softened potatoes from the water and mash with a small amount of butter until creamy and lump-free.

  11. Serve the chicken and sauce on top of the mash with asparagus. Finish with a sprinkle of pepper and Parmesan.

Notes

The source does not specify most ingredient amounts, the chicken cut, or how the asparagus is prepared or cooked. Potato mash is optional (the source says “if” making your own).
