Ingredients

  • 40 g rolled oats
  • 150 g 0% fat Greek yogurt
  • 50 ml milk
  • vanilla extract (A splash, approximately 2 g)
  • honey (A squeeze, estimated at approximately 10 g)
  • 0.5 tbsp maple syrup
  • 10 g peanut butter
  • milk (A splash for the caramel, estimated at approximately 15 ml)
  • 10 g peanuts
  • 10 g dark chocolate
  • 1 tsp coconut oil

Steps

  1. 1

In a jar, bowl, or lidded container, combine the rolled oats, Greek yogurt, milk, vanilla extract, and honey. Stir thoroughly until the oats are evenly coated and the mixture is smooth.

  2. 2

In a separate small bowl, combine the peanut butter, maple syrup, and the splash of milk. Stir until the mixture becomes smooth and reaches a loose, caramel-like consistency.

  3. 3

Pour the peanut-butter caramel evenly over the oat mixture.

  4. 4

Sprinkle the peanuts over the caramel layer.

  5. 5

Melt the dark chocolate and coconut oil together gently, using short microwave intervals or a heatproof bowl over simmering water. Stir until glossy and completely combined.

  6. 6

Pour the melted chocolate over the peanuts, spreading it into an even top layer.

  7. 7

Cover the container and refrigerate overnight, or until the oats have softened and the chocolate topping has set. Serve chilled for breakfast.
