High Protein Cottage Cheese Pancakes

- 6 cup Low-fat cottage cheese (low-fat)
- 12 Eggs (whole)
- 3 tsp Vanilla extract
- 12 tbsp Sugar-free maple syrup (SF (Sugar Free))
- 3.75 cup Self-rising flour (Self-rising flour)
- 180 g Stevia-sweetened chocolate chips (stevia-sweetened)

In a large bowl, combine the 6 cups of low-fat cottage cheese with the 12 whole eggs.

Add the 3 tsp of vanilla extract and the 12 tbsp of sugar-free maple syrup to the mixture.

Gradually incorporate the 3.75 cups of self-rising flour, mixing until the ingredients are combined.

Add the 180g of stevia-sweetened chocolate chips and distribute them evenly throughout the batter.

Heat a non-stick skillet or griddle over medium heat. If you want perfectly round pancakes, you can use silicone or metal circular molds.

Pour portions of the batter into the hot skillet. Cook until bubbles appear on the surface and the edges look set.

Carefully flip the pancakes and cook on the other side until they are golden brown and cooked through.

Notes
This recipe is designed for meal prep and yields 30 units. For a standard serving of approximately 10 pancakes, divide all quantities by 3. They can be easily frozen and reheated.
