Cinnamon Sugar Bites
Quick, cinnamon-roll-inspired dough bites made with thick Greek yoghurt and self-raising flour. They bake until lightly golden and are finished with a simple vanilla icing; the texture is denser and more dough-ball-like than a pillowy cinnamon roll.

Ingredients
- 150 g Thick Greek yoghurt
- 150 g Self-raising flour
- 1 tbsp Butter (Melted)
- 3 tbsp Caster sugar (Mixed with the soft light brown sugar and cinnamon for the coating)
- 1 tbsp Soft light brown sugar (Mixed with the caster sugar and cinnamon for the coating)
- 1.5 tsp Cinnamon (Mixed with the sugars for the coating)
- 12 g Icing sugar (Sifted, for the frosting)
- 0.25 tsp Vanilla (For the frosting; source does not specify extract or another form)
- 1 tsp Milk (For the frosting)
Steps
- 1
Preheat the oven to 180°C/350°F. Line a baking tray with baking paper.
- 2
Put the self-raising flour and Greek yoghurt in a bowl. Mix with a spoon, then bring the dough together with your fingers.
- 3
Turn the dough onto a work surface and knead briefly into a ball. Do not over-knead.
- 4
Divide the dough into four portions and roll each into a log.
- 5
Cut the logs into small bites, about 25 pieces in total. Briefly roll each piece between your hands to make it round, if desired.
- 6
Melt the butter. In a bowl, mix the caster sugar, soft light brown sugar, and cinnamon to make the cinnamon-sugar coating.
- 7
Put the dough bites in a bowl, add the melted butter, and toss gently with a spoon or your hands until coated.
- 8
Add the cinnamon-sugar mixture and toss gently until each dough bite is coated. Transfer them to the prepared tray, including any remaining cinnamon sugar.
- 9
Bake for approximately 16–20 minutes, until cooked through and very slightly golden. The creator reports taking them out at 16 minutes.
- 10
While the bites bake, sift the icing sugar into a small bowl. Add the vanilla and milk, then mix into a frosting.
- 11
Once baked, spoon the frosting over the bites and serve warm.
Notes
The bites are described as denser and more dough-ball-like than cinnamon rolls. No resting is needed. The frosting is called cream frosting in the audio transcript, while the written ingredient list specifies icing sugar, vanilla, and milk.
