  • 1 yellow onion (diced)
  • 3 carrots (sliced)
  • 3 celery stalks (sliced)
  • 1 tsp turmeric (can use up to 2 tsp)
  • 1 tsp dried thyme (can use up to 2 tsp)
  • salt (to taste)
  • black pepper (to taste)
  • 3 cup shredded chicken breast (cooked)
  • 1 L chicken bone broth
  • 8 oz noodles of choice (cooked separately and added when serving)
  • 1 tbsp olive oil (for sautéing vegetables)

Steps

    Prepare the vegetables by dicing the yellow onion and slicing the carrots and celery stalks.

    In a large pot, heat a tablespoon of olive oil over medium heat. Add the onion, carrots, and celery.
