Ingredients

  • 2 lb Boneless chicken thighs (Cut into small cubes)
  • 2 tbsp Hellmann’s Chipotle Mayonnaise (For the chicken marinade)
  • Salt (To taste)
  • 1 tbsp Chipotle peppers in adobo sauce
  • 5 cloves Fresh garlic (Minced)
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tbsp Lime juice
  • Oil (For cooking)
  • 2 cups Mozzarella cheese (Shredded)
  • 1 cup Hellmann’s Chipotle Mayonnaise (For serving)
  • 15 Mini flour tortillas
  • 1 cup Lettuce (Shredded)
  • 2 Tomatoes (Large; diced)
  • 1 Red onion (Diced)

Steps

  1. 1

In a blender, combine the 2 tablespoons of chipotle mayonnaise, salt to taste, chipotle peppers in adobo sauce, minced garlic, black pepper, and garlic powder. Blend until smooth.

  2. 2

Transfer the blended chipotle mixture to a large bowl and whisk in the lime juice.

  3. 3

Add the cubed chicken to the bowl and toss until it is evenly coated with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.

  4. 4

Heat oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess liquid to drip off.

  5. 5

Cook the chicken in batches for about 5–7 minutes per batch, until browned and cooked through. Transfer each cooked batch to a plate and set aside.

  6. 6

Preheat a large skillet or griddle over medium heat and add some oil.

  7. 7

Place one mini flour tortilla in the skillet. Sprinkle a small amount of shredded mozzarella over half of the tortilla.

  8. 8

Place a few pieces of the cooked chipotle chicken on top of the cheese.

  9. 9

Fold the tortilla in half to enclose the filling. Cook for 2–3 minutes, until the tortilla is crispy and the cheese is melted.

  10. 10

Flip the taco and cook for an additional 2 minutes.

  11. 11

Repeat the tortilla, cheese, chicken, folding, and cooking process with the remaining tortillas and filling ingredients.

  12. 12

Spread a dollop of chipotle mayonnaise on each taco, then top with shredded lettuce, diced tomatoes, and diced red onion.

  13. 13

    Serve and enjoy.
