Ingredients
- 1.5 tbsp olive oil (For the beef filling; additional oil for lightly greasing the skillet is mentioned but not quantified.)
- 1 lb ground beef
- 1.667 tsp paprika
- 1 tsp garlic powder
- 1 tsp cayenne pepper
- 0.333 tsp black pepper
- 0.5 beef bouillon cube (Crumble over the pan.)
- 0.333 cup green bell pepper (Diced.)
- 1 yellow onion (Small; finely diced.)
- 3 tbsp tomato sauce
- 8 large flour tortillas (10-inch.)
- sauce of your choice (To taste; salsa, sour cream, or chipotle mayo.)
- cheese slices (Cheddar or Monterey Jack; the recipe uses one slice per wrap.)
- 1.5 cups shredded Mexican-blend cheese (For the cheese crust.)
- oil (For lightly greasing the skillet; amount not specified.)
Steps
- 1
Set out all of the ingredients. Finely dice the yellow onion and dice the green bell pepper if they are not already prepared.
- 2
Heat the measured olive oil in a skillet over medium-high heat.
- 3
Add the ground beef, paprika, garlic powder, cayenne pepper, and black pepper to the skillet. Crumble the beef bouillon cube over the pan.
- 4
Cook for 3–4 minutes, breaking up and crumbling the beef as it cooks.
- 5
Stir in the diced green bell pepper and onion. Cook for 4–5 minutes.
- 6
Add the tomato sauce and cook until the filling comes together.
- 7
Let the beef filling cool.
- 8
Lay one tortilla on a clean work surface. Place a slice of cheese in the center.
- 9
Add sauce to taste, then spread about ⅓ cup (80 g) of beef filling over the cheese, leaving enough space around the tortilla’s edges for folding.
- 10
Fold in the sides of the tortilla, then fold the top and bottom over to make a tight package. Set it seam-side down and repeat with the remaining tortillas, cheese, sauce, and filling.
- 11
Heat a skillet over medium-low to medium-high heat and lightly grease it with oil.
- 12
Cook the folded wraps for 2–3 minutes per side, until golden brown and crispy.
- 13
Lower the heat to medium-low. Sprinkle a small handful of shredded Mexican-blend cheese in the center of the pan and let it melt slowly.
- 14
Place a filled wrap on the melted cheese and cook until the cheese is golden and crispy.
- 15
Remove the wrap from the pan. Repeat the melted-cheese crust step with the other wraps.
Notes
The source does not specify the amount of sauce or sliced cheese, or the amount of oil used to grease the skillet. It also does not state a separate cooling duration.
