Ingredients
- 1.5 shallots (thinly sliced; 1-2 shallots)
- 7 lb turkey breast (bone-in, skin-on; 2-3 pounds)
- 0.5 cup salted butter (melted or browned)
- 1 tsp lemon pepper
- 1 tsp sea salt
- 1 tsp lemon zest
- 1 tsp fresh rosemary (finely chopped)
- 2.5 sprig fresh thyme (leaves only; plus more for garnish; 2-3 sprigs)
Steps
- 1
Sprinkle the sliced shallots in the bottom of the slow cooker.
- 2
Place the 2-3 pound bone-in turkey breast over the shallots, skin side up.
- 3
Melt 1/2 cup salted butter in a small bowl. For more flavor, you can brown the butter instead.
- 4
Add 1 teaspoon lemon pepper, 1 teaspoon sea salt, 1 teaspoon lemon zest, 1 teaspoon finely chopped fresh rosemary, and the leaves from 2-3 sprigs of thyme to the melted butter. Mix together to fully combine.
- 5
Pour the butter and herb mixture over the top of the turkey breast. Try to keep as much of the mixture on the breast as possible, though some run-off into the bottom of the pot is fine.
- 6
Place the lid on the slow cooker and cook on HIGH for 4-6 hours.
- 7
Test the temperature of the thickest part of the turkey breast occasionally to avoid overcooking. Remove the turkey once the internal temperature reaches 165°F.
- 8
Lift the turkey breast from the slow cooker and transfer it to a baking sheet.
- 9
Broil for 2-3 minutes, or until the skin has achieved your desired level of browning and crispness.
- 10
Slice the turkey and serve with gravy.
Notes
To make gravy from the drippings: Pour the slow cooker drippings into a skillet. Add water or broth if more volume is needed. Bring to a simmer. Dissolve 1 tablespoon cornstarch in 1 tablespoon water and whisk into the skillet. Boil until thickened and season with salt and pepper. Ensure the turkey breast is fully thawed before cooking. For an alternative method, you can mix the spices into softened butter and slather it onto the breast instead of using melted butter.
