Strawberry Cheesecake Protein Fluff Cups

Ingredients
- 1 box Sugar-free strawberry gelatin powder (One 0.3 oz box)
- 1 cup Non-fat Greek yogurt
- 4 oz Light cream cheese (Softened)
- 1 scoop Vanilla protein powder
- 0.5 cup Unsweetened almond milk
- 1 tsp Vanilla extract
- 1 cup Light whipped topping (Such as Lite Cool Whip)
- 0.5 cup Fresh strawberries (Diced; optional)

Place the softened light cream cheese, non-fat Greek yogurt, and vanilla extract in a large mixing bowl. Beat with a hand mixer or stand mixer until completely smooth and no visible lumps remain.

Add the sugar-free strawberry gelatin powder, vanilla protein powder, and unsweetened almond milk to the smooth cream cheese mixture. Beat again until the gelatin and protein powder are fully incorporated and the mixture is uniform.

Add the light whipped topping. Fold it in gently with a spatula until the mixture is light, airy, and evenly combined; avoid overmixing so the fluff retains its volume.

If using strawberries, add the diced fresh strawberries and gently stir them through the mixture until distributed.

Divide the mixture evenly among four small meal-prep cups. Smooth the tops with the back of a spoon.

Cover the cups and refrigerate for at least 2 hours, or until thoroughly chilled and set. Serve cold.
Notes
The diced strawberries are optional. Keep the covered cups refrigerated and serve chilled.
