Ingredients

  • 2 cup Water (For soaking the diced onion)
  • 1 lb Cooked chicken (Shredded or finely diced)
  • 0.5 Red onion (Finely diced)
  • 1 Avocado (Cubed)
  • 1 handful Fresh cilantro (Chopped, for the chicken salad)
  • 5 tbsp Cottage cheese (For the dressing)
  • 3 tbsp Mayonnaise (For the dressing)
  • 1 tbsp Onion powder (For the dressing)
  • 3 Lime juice (Juice of 3 limes)
  • 1 handful Fresh cilantro (Chopped, for the dressing)
  • Salt (To taste)
  • Black pepper (To taste)
  • 4 English cucumbers (One large cucumber per roll; thinly sliced lengthwise with a vegetable peeler)
  • 8 tbsp Whipped cream cheese (Two tablespoons per roll)
  • 16 oz Prepared chicken salad (Four ounces per roll)
  • Everything bagel seasoning (For finishing, to taste)
  • Chipotle hot sauce (For finishing, to taste)

Steps

    Place the finely diced red onion in a bowl and cover it with 2 cups of water. Let it soak for 10 minutes to mellow its sharpness, then drain it very well.

    Add the cooked shredded or finely diced chicken, drained red onion, cubed avocado, and chopped cilantro for the salad to a large mixing bowl.

    Add the cottage cheese, mayonnaise, onion powder, lime juice, chopped cilantro for the dressing, salt, and black pepper to a blender. Blend until smooth and creamy.

    Pour the blended dressing over the chicken mixture. Fold and toss gently until the chicken is evenly coated while keeping the avocado pieces as intact as possible.

    Using a vegetable peeler, shave each English cucumber lengthwise into long, thin strips. Work carefully so the strips remain intact and flexible.

    Lay the cucumber strips on a sheet of parchment paper, overlapping neighboring strips by about one-third to form a solid rectangular sheet. Pat the cucumber thoroughly dry with paper towels; this helps the cream cheese adhere and keeps the roll from slipping.

    Spread 2 tablespoons of whipped cream cheese evenly over the cucumber sheet, leaving a small border around the edges.

    Place 4 ounces of prepared chicken salad near the bottom edge of the cucumber sheet, leaving space around the edges so the filling does not squeeze out during rolling.

    Starting at the bottom, roll the cucumber tightly around the filling. Press gently as you roll to help the layers hold together without tearing the cucumber.

    Slice the roll into portions with a sharp knife. Finish with everything bagel seasoning and chipotle hot sauce, then serve immediately.

Notes

The listed cucumber, cream cheese, and chicken salad quantities make approximately four rolls. Pat the cucumber slices especially dry before assembly so the cream cheese sticks and the rolls hold their shape.
