Ingredients
- 1.25 lb poached chicken (shredded; rotisserie chicken can be used for speed)
- 4 scallions (thinly sliced)
- 1 jalapeño (thinly sliced or diced)
- 0.25 cup fresh cilantro (chopped)
- 2 tbsp fresh mint (chopped)
- 0.75 cup Greek yogurt
- 0.25 cup mayonnaise
- 1 lime juice (juice of 1 lime)
- 0.75 tsp fine sea salt

In a large bowl, add the shredded chicken, sliced scallions, diced jalapeño, cilantro, and mint.

Notes
