Ingredients
- 2 yellow onions (Medium, thinly sliced)
- 8 oz fettuccine
- 1 cup salt (To taste; used in the pasta water and sauce)
- 6 cloves fresh garlic (Minced)
- 1 tsp black pepper
- 1 tbsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 2 tbsp butter
- 2 tbsp oil
- 1.5 tbsp chili oil (Adjust to taste)
- 2 tbsp tomato paste
- 1 cup unsweetened heavy whipping cream
- 1 cup reserved pasta water (Reserved from boiling the pasta)
- 1 tbsp dried parsley (For garnish)
- 0.5 cup Parmesan cheese (Freshly grated; additional Parmesan may be used for garnish if desired)
Steps
- 1
Bring a pot of salted water to a boil. Cook the fettuccine according to the package instructions. Before draining, reserve 1 cup of the pasta water for the sauce, then drain the pasta.
- 2
Heat the oil and butter together in a skillet over medium heat. Once the oil is hot and the butter has melted, add the sliced onions.
- 3
Sauté the onions over medium-low heat for 10 minutes. Once they are translucent, season with salt and continue cooking for another 10–15 minutes, stirring occasionally, until caramelized.
- 4
Add the minced garlic and sauté for 1–2 minutes.
- 5
Add the tomato paste, chili oil, salt, black pepper, garlic powder, onion powder, and Italian seasoning to the skillet. Stir to combine.
- 6
Pour in the reserved pasta water and mix until combined.
- 7
Add the heavy whipping cream. Simmer the sauce over medium-low heat for 2–3 minutes, until it thickens.
- 8
Stir in the freshly grated Parmesan cheese until incorporated into the sauce.
- 9
Add the boiled fettuccine to the skillet and mix well so the pasta is coated with the sauce.
- 10
Garnish with the dried parsley and additional Parmesan cheese if desired. Serve warm.
Notes
The source does not specify the pasta cooking time beyond following the package instructions. Salt is listed to taste and is used both in the pasta water and sauce.
