Ingredients

  • 4 Yellow onions (thinly sliced)
  • 99 g Sun dried tomatoes (julienne cut, Bella Sun Luci brand (1 bag))
  • 1 tbsp Paprika
  • 1 tbsp Italiano one step seasoning (Club House brand)
  • 1 tbsp Parsley (dried)
  • 0.5 tsp Salt
  • 1 tsp Black pepper
  • 20 Garlic (cloves)
  • 0.33 cup Olive oil
  • 0.5 cup Coconut milk (Aroy-D brand)
  • 1 Lemon (juiced)
  • 2 tbsp Fresh parsley (chopped)
  • 0.25 cup Parmesan cheese (grated)
  • 5 cup Eliccoidali pasta (Antonio Amato brand)
  • 0.5 cup Pasta water (reserved from cooking the pasta)

Steps

    Preheat your oven to 400°F (200°C).

    Thinly slice the 4 yellow onions. The creator recommends using a mandolin for speed and consistent thickness, but be careful of your fingers.

    In a 13x9-inch baking dish, add the sliced onions, sun-dried tomatoes, 1 tbsp paprika, 1 tbsp Italiano seasoning, 1 tbsp dried parsley, 1/2 tsp salt, 1 tsp black pepper, 20 cloves of garlic, and 1/3 cup olive oil.

    Mix the ingredients in the baking dish well until everything is evenly coated in oil and spices.

    Cover the baking dish tightly with tin foil.

    Place the dish in the oven and bake at 400°F for 1 hour.

    When there are about 10 minutes left on the oven timer, bring a large pot of salted water to a boil and cook the 5 cups of eliccoidali pasta according to package directions.

    Before draining the pasta, carefully reserve 1/2 cup of the starchy noodle water. Drain the rest of the pasta.

    Once the hour is up, remove the baking dish from the oven and remove the foil.

    Add 1/2 cup coconut milk, the juice of 1 lemon, 2 tbsp fresh chopped parsley, the cooked pasta, and the reserved 1/2 cup of pasta water to the baking dish.

    Mix everything together thoroughly so the roasted onion mixture forms a creamy sauce that coats the pasta.

    Top with 1/4 cup of grated parmesan cheese and serve immediately.

Notes

The creator uses a mandolin to slice the onions very thinly. If you don't have coconut milk, one commenter mentioned the recipe is still delicious without it, though it will be less creamy. You can also add sautéed mushrooms or chicken for extra protein.
