Ingredients

  • 300 g raw shrimp (cleaned and deveined)
  • 2 scallions (chopped)
  • 0.5 carrot (grated)
  • 2 cloves garlic (finely minced)
  • 0.5 tsp white pepper
  • 1.5 tbsp hoisin sauce (or oyster sauce)
  • 2 tsp cornstarch (maicena)
  • 4 sheets rice paper
  • 3 tbsp soy sauce
  • 0.5 tbsp chili crisp (crispy chili oil)
  • 1.5 tbsp water
  • 1 tsp sesame seeds
  • 1 tbsp sugar
  • cooking spray (for cooking)

Steps

    Finely chop the raw shrimp until you reach an almost paste-like consistency.

    Finely chop the scallions and garlic.

  3. 3

    Place the shrimp, scallions, and garlic in a mixing bowl.

  4. 4

    Grate the half carrot directly into the bowl with the shrimp mixture.

    Add the white pepper, hoisin sauce (or oyster sauce), and cornstarch. Mix everything very well until fully incorporated.

    Briefly dip a sheet of rice paper in warm water to soften it and place it on a cutting board.

    Place a thin line of the shrimp mixture on one end of the rice paper. Fold the sides inward and roll up tightly.

    Cut the roll into bite-sized pieces. Repeat the process with the remaining sheets and filling.

    Spray a bit of oil into the air fryer basket or use parchment paper.

    Place the shrimp bites in the basket and spray the tops with a bit more oil.

    Cook in the air fryer at 375°F (190°C) for 11 to 15 minutes, or until the shrimp is fully cooked and the exterior is firm.

    While the bites are cooking, prepare the sauce by mixing the soy sauce, chili crisp, water, sesame seeds, and sugar in a small bowl.

    Serve the bites hot accompanied by the dipping sauce.

Notes

You can substitute hoisin sauce for oyster sauce if you prefer. Make sure not to wrap the rice paper too tightly, as it is fragile when wet.
