  • Sesame seeds (For topping)
  • Fried onions (For topping)

Steps

  1. 1

Bring water to a boil. Cook the ramen noodles according to the package directions, then reserve 1 cup of the ramen cooking water before draining.

  2. 2

Heat the butter in a pan over medium heat. Add the thinly sliced onion and cook until softened and lightly colored.

  3. 3

Add 1 tablespoon soy sauce to the softened onions and mix.

  4. 4

Pour in the coconut milk and 1 cup of reserved ramen water. Mix well, then reduce the heat to low and keep the broth warm on the burner.

  5. 5

In a large serving bowl, add the egg yolk, Kewpie mayonnaise, 1 tablespoon chili crisp, peanut butter, 1 tablespoon soy sauce, rice vinegar, and sesame oil. Add the ramen seasoning packet and mix well to form the soup base.

  6. 6

Pour the hot onion-and-coconut broth into the bowl with the soup base. Mix thoroughly until combined.

  7. 7

Add the cooked ramen noodles to the bowl and mix them into the soup.

  8. 8

Top with green onions, sesame seeds, fried onions, and additional chili crisp. Serve immediately.
