Ingredients

  • 2 lb Ground pork
  • 2 tbsp BBQ rub seasoning (Or more as needed to season the patties well.)
  • 1 Onion (Sliced; use raw to top the sandwiches.)
  • 0.5 cup Dill pickles
  • 6 Seeded hoagie rolls (Toast before assembling.)
  • 1 cup Ketchup
  • 0.25 cup Water
  • 0.25 cup Brown sugar
  • 3 tbsp White vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika
  • 0.5 tsp Black pepper

Steps

  1. 1

Preheat the oven to 400°F (200°C).

  2. 2

Shape the ground pork into six rib-shaped patties. Use a spatula to press horizontal lines into each patty, then season them well with the BBQ rub seasoning; use more than 2 tablespoons if needed.

  3. 3

Arrange the patties on a sheet pan fitted with a wire rack so the grease can drain away. Bake at 400°F (200°C) for about 20 minutes, or until the pork reaches an internal temperature of at least 165°F (74°C).

  4. 4

While the patties bake, combine the ketchup, water, brown sugar, white vinegar, and Worcestershire sauce in a pan.

  5. 5

Add the onion powder, garlic powder, smoked paprika, and black pepper to the sauce, then stir well.

  6. 6

Heat the sauce over medium heat, stirring, until it is well combined and beginning to thicken. Remove it from the heat and set it aside.

  7. 7

Brush the cooked patties with the homemade sauce and return them to the oven for a couple of minutes.

  8. 8

Toast the hoagie rolls. Build the sandwiches with the patties, sliced onion, and dill pickles, then serve.

Notes

The cooked patties can be frozen in an airtight container or freezer bags and reheat well. Ground beef, turkey, or chicken can substitute for pork; the flavor will differ. The patties can also be grilled for a few minutes per side until they reach 165°F (74°C), or smoked at 275°F (135°C) for about 40 minutes, adding sauce halfway through. Bottled barbecue sauce is a quicker alternative to the homemade sauce.
