One-Pan Chicken Chow Mein

Ingredients
- 150 g noodles or pasta (Any noodles or pasta; cook separately before adding to the stir-fry.)

Heat the olive oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast, salt and pepper, paprika, and lemon juice.

Cook the chicken for about 5 minutes, stirring occasionally, until it is opaque and lightly browned and reaches 165°F/74°C in the thickest pieces. Transfer the cooked chicken to a plate.

Add the chopped cabbage, shredded carrots, chopped green onions, celery, low-sodium soy sauce, minced garlic, and minced ginger to the same skillet. Stir-fry until the vegetables soften but still retain some texture, about 3–5 minutes.

Return the cooked noodles and chicken to the skillet. Add the honey, then toss everything together until the noodles are coated and the chicken and noodles are heated through, about 1–2 minutes.

Divide the chow mein between two servings. Finish with red pepper flakes if desired. Optional additions include edamame, red peppers, green beans, broccoli, or a small drizzle of sesame oil after cooking.
