Ingredients

  • 2 eggs (whole)
  • 0.5 cup plain Greek yogurt (0% fat)
  • 0.5 cup milk (1% low-fat recommended)
  • 1 tsp vanilla extract
  • 2 tsp coconut oil
  • 1 cup oat flour (heaping cup; blended rolled oats used in source)
  • 2 scoops vanilla protein powder
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp cinnamon
  • 0.5 tsp ginger (ground)
  • 0.33 cup sweetener (stevia or Splenda brown sugar recommended)
  • salt (a pinch)
  • 1 cup carrots (grated)
  • 0.25 cup light cream cheese (95% light used in source)
  • 1 tbsp sweetener (for icing)
  • 0.25 tsp vanilla extract (for icing)
  • 0.5 scoop vanilla protein powder (optional, for icing)

Steps

    Preheat your oven to 350°F (175°C).

    In a large mixing bowl, crack the eggs and add the Greek yogurt, milk, vanilla extract, and coconut oil.

    Whisk the wet ingredients together until well combined.

    Add the flour, vanilla protein powder, baking powder, baking soda, cinnamon, ginger, sweetener, and a pinch of salt to the wet mixture.

    Mix the batter thoroughly until the dry ingredients are fully incorporated and the batter is smooth.

    Grate the carrots directly into the bowl or add pre-grated carrots, then fold them into the batter.

    Pour the batter into a loaf tin.

    Bake in the preheated oven for approximately 28-30 minutes, or until the cake is soft, fluffy, and a toothpick comes out clean.

    While the cake bakes, prepare the icing by mixing the light cream cheese, sweetener, vanilla extract, and optional protein powder in a small bowl until smooth.

Notes

The author recommends using blended rolled oats as the flour source. For the sweetener, stevia or Splenda brown sugar works well. If the cake feels raw inside, ensure your oven is properly calibrated or bake for a few extra minutes as protein powder recipes can vary in moisture.
