Banana Blueberry Oat Cake

Ingredients
- 2 ripe bananas (mashed)
- 2 eggs
- 2 tbsp honey
- 1.5 cup oat flour
- 0.5 cup fresh blueberries (plus extra for topping)

In a large mixing bowl, mash two ripe bananas thoroughly until they reach a smooth consistency.

Add two eggs and two tablespoons of honey to the mashed bananas.

Whisk the mixture until it is smooth and well combined.

Add one and a half cups of oat flour to the wet ingredients and mix until just combined.

Gently fold in one half cup of fresh blueberries into the batter.

Line a cake pan with parchment paper and pour the batter into the pan.

Sprinkle a few extra blueberries on top of the batter for garnish.

Bake in a preheated oven at 180°C (350°F) for 25 to 30 minutes until the top is golden brown and a toothpick inserted into the center comes out clean.
Notes
For the best flavor and sweetness, ensure the bananas are very ripe (spotted with brown). You can make your own oat flour by pulsing rolled oats in a blender until fine.
